This is the recipe I've used for years. Soaking the bird for 3 days is just right. You may have to make multiple batches of the brine to cover your bird.
8 Cups of Water
1 Cup Morton's "Tender Quick"
1 1/2 Cups White Vinegar
1 Cup Brown Sugar
