Buddy Guys Corn bread cooking question (1/29/2003 10:43:11 AM by Hogtie)

Over the weekend I used Buddy Guys Corn Bread receipe and it was terrific! My first time to cook homemade corn bread and in a cast Iron skillet at that!. BUT, I have a question?
I cooked it in 350 degree oven (as told to) and it cooked from the outside of the skillet toward the center (the center being the last place it seemed to cook). It was golden brown and a toothpick came out clean when inserted. BUT...when I went to cut it, it started to crumble. NOW, the inside was very moist and cooked, but should it not cut easy into squares and stay compact? It tasted great and it was cooked all the way thru. Is there something I'm missing, in the cooking process?

Had it something to do with the cast iron pan?

Any insight would be helpful.

it will tend to crumble a little but it shouldnt just fall apart. I cut mine into squares without a probelm. How long did you cook it?

Might try adding another egg. That usually helps solve the crumbly cornbread dielemma. I also like to cook cornbread at 425..may not help the crumblies but think it do improve the crunchies. Dont thin <more>

did you preheat the skillet before putting the batter in? The recipe I use specifies that you heat some bacon grease in the skillet first and then dump the batter in, I like to saute some onions and j <more>

I rubbed the iron skillet with alot of shortening and then stuck it in the over for about 5 minutes. Also, I cut the cooking time by 5 minutes. It still cooks after you take it out of the oven becau <more>

I make a very similar version...posted below....I noticed mine calls for 1 more egg than Bubba's. Plus, it may have been slightly overcooked. I once tried Emeril's Skillet CornBread and the baking d <more>

This isnt Buddy Guys recipe ..its Chef Gerards (Bubba) recipe. He is the chef at Buddy Guys blues club in Chicago. Just want to give credit where it is due.(although Buddy is a fine blues musician)

it turned out great!!  Variations, I didn't have (forgot to grab) a 7-up and we drink mostly diet soda around here and I didn't want to risk a bitter nutra-sweet reaction in cooking so my li <more>
