Over the weekend I used Buddy Guys Corn Bread receipe and it was terrific! My first time to cook homemade corn bread and in a cast Iron skillet at that!. BUT, I have a question?
I cooked it in 350 degree oven (as told to) and it cooked from the outside of the skillet toward the center (the center being the last place it seemed to cook). It was golden brown and a toothpick came out clean when inserted. BUT...when I went to cut it, it started to crumble. NOW, the inside was very moist and cooked, but should it not cut easy into squares and stay compact? It tasted great and it was cooked all the way thru. Is there something I'm missing, in the cooking process?
