it turned out great!!

Variations, I didn't have (forgot to grab) a 7-up and we drink mostly diet soda around here and I didn't want to risk a bitter nutra-sweet reaction in cooking so my liquids changed.... instead of 1 cup of 7-up and 1/2 cup of buttermilk, I used 1 cup of butter milk and 1/2 cup of water. I also used 2 cups of buttermilk cornmeal mix (flour, salt and baking powder added) instead of the corn meal, flour, salt and baking powder in the recipe.

I used 3 jalapeno peppers, halved, seeded and then sliced across the pepper into short sticks and half an onion diced up. Saute'd these in a healthy tablespoon of bacon drippings in my small CI skillet. While these were wilting down, I mixed the rest up except the melted butter which I dumped in with the veggies when they were about saute'd, then swirled the whole mess around and after the skillet was all lubed up dumped it into the mixing bowl and mixed up the batter good. Dumped it all BACK into the skillet and then into a 425 oven for a little over 20 minutes.... YUM!! This recipe stayed moist... I may have dumped in a LITTLE more than 1 cup of buttermilk but not enough to be apparent... the peppers and onions were there but mellow. This went really well with a bowl (or 2) of chili (jacked up with a little chipotle powder of course!)

I'll definitely write this one down!
