I forgot to post this a while back. it's one I like to use often. It ain't healthy but it is good!

bbqBob's Cornbread

1 cup a/p flour
1 cup cornmeal (I use 1/2 medium grind and 1/2 coarse grind)
6 T. sugar
1 t. salt
1 T. chili powder (I use ancho)
2 eggs, slightly beaten
2 cups (16oz) sour cream
1 4oz. can chopped peppers or 2 or 3 chopped fresh jalapeno's
1 15oz. can corn, drained
few T. of bacon grease
soft butter


Preheat oven to 400 and place a cast iron skillet in it. Mix all dry ingredients in a large bowl then add eggs, sour cream, peppers and corn and mix until combined. Put the bacon grease in the heated skillet and allow to melt. May need to place it back in oven to do so. Once melted swirl the grease around pan coating sides also. Pour the batter into the pan (you should hear a sizzle) and place it the oven. Bake for about 20-30 minutes. When done remove from oven and give a good coat of butter over the top of warm cornbread. Now eat!

Bob-do you use self rising corn meal/ the reason i ask is that I dont see any baking powder or baking soda in the recipe
