did you preheat the skillet before putting the batter in? The recipe I use specifies that you heat some bacon grease in the skillet first and then dump the batter in, I like to saute some onions and jalapenos diced up in a couple tablespoons of reserved bacon drippings.... heck, sometimes even do the bacon in the pan first to get the drippings, then remove the bacon and excess drippings and do the UN-yon and peppahz and then crumble the bacon and stir in the veggies before adding back to the pan.... YUM!! I can see I'm going to have to do a batch of this tonight to eat with the chili my wife made last night (ok, it's not classic chili like I would make, it's typical midwestern chili-soup but still..... Southwestern cornbread will go RIGHT along with it!)

Ive made the Buddy Guys recipe countless times. I usuallly lightly grease the pan with butter or margarine. I think his may have been overcooked. Still waiting on his answer .
